Sunday evening’s the kids and I like to wind down in the kitchen. It’s kind of our last hoorah for the weekend and a gets us off on the right foot for a fresh Monday. We usually make a big batch of a hybrid goody. Hybrid meaning it’s healthy, full of protein, low in sugar, you get the picture. Something that can double as a treat and healthy snack. I may be a little overly obsessed with taking any and every recipe and turning it healthy, really, just ask my famiy it’s kind of a problem, but in all reality it’s actually really fun for me! I get all sorts of crazy ideas and I am often surprised at how many of them actually turn out to be delightfully good without all the guilt and weight on the hips. ;) Trust me I have had my fair share of failures in the kitchen, which I am sure I you will eventually hear about, but what’s success without failure right?
Moving on… I think I will open up this healthy treat section with one of my personal favorites… White Chocolate Chip Dried Cranberry Protein Cookies. The only unhealthy thing in this entire recipe is of course the white Chocolate Chips unless you replace the average white chocolate chip with a healthier option. Here is a great sugar free option, and then a great vegan option. The vegan option comes in a pack of 4.
You will soon find out that rather than just add a simple whole wheat flour as a dry goods (flour) base, I like to get a lot more creative. Here are some of the ingredients I use when creating the dry goods (flour) base for my recipes.
Flour Base for this Recipe:
Almond Meal (this is usually a little course) - the one I linked is comes in a 6 pack:)
Oat Flour. You can either make your own by grinding your oats in a food processor or you can use this. If you are making the flour from your food processor just make sure you grind it up ALL THE WAY as powdery as you can get it!!! I have done both methods and had similar results.
I like to use this Vanilla Protein Powder for cooking…. I would say protein powder is one area that really matters when it comes to selection. I like to use this Garden of Life Protein Powder for baking, not just because it tastes great but the brand and company are just so solid. They make a really high quality product. I have been using some of their other protein powders for my shakes for years. I'll cover shakes on another post. To say the least, I’m a fan;)

I try to have the above ingredients in my pantry at all times so I am prepared for any unexpected baking. I have them all listed at the bottom to make it a little easier for you all. The rest of the ingredients are pretty straight forward. Now the last piece of advice I would give for baking this recipe is to follow the instructions!!! How you add your dry and wet ingredients MATTERS people. Especially when eggs and butter are involved. Well I’ll leave it at that so you can get baking.
